INGREDIENTS:
2 large chicken breasts cooked and shredded 1 yellow onion 1 red pepper 1 green pepper 1 tbsp olive oil 2 tbsp taco seasoning 1 bag cauliflower rice 2 low carb tortillas 2 cups shredded Colby jack cheese
INSTRUCTIONS:
1. Preheat oven to 350 2. In a skillet over medium high heat, sauté onion and peppers in olive oil until tender. 3. Prepare cauliflower rice according to package. 4. Toss shredded chicken breasts with 2 tbsp taco seasoning. 5. Add chicken and cauliflower rice together and stir. 6. Spread chicken and rice mixture into a 9x13 baking dish. 7. Layer with 2 tortillas and spread pepper mixture over top. 8. Top with cheese and cover with foil. 9. Bake for 25 minutes and remove tin foil. 10. Cook for another 5 minutes. 11. Enjoy!
