INGREDIENTS
2 pounds boneless skinless chicken breasts or thighs
6 cloves garlic minced
1 cup baby bella mushrooms
1 cup heavy cream
3/4 cup parmesan cheese
1/3 cup chicken broth
1 tablespoon Italian seasoning
Sea salt
Black pepper
1/2 cup chopped sun dried tomatoes
2 cup spinach
INSTRUCTIONS
Place the chicken in the bottom of slow cooker. Season with salt, pepper and Italian Seasoning. Top with sun dried tomatoes and baby bella mushrooms.
Add remaining ingredients (except spinach) making sure to pour on top and coat chicken and veggies.
Cover and cook on high for 3-4 hours or low for 6 hours.
Remove chicken from slow cooker and add spinach and turn crock to high. Cover and cook for 5 minutes or until spinach is wilted.
Pour sauce over chicken.
Serve with pasta or rice. If keto serve over califlower rice.
