INGREDIENTS:
3 chicken breasts, shredded
2 tbsp butter or olive oil
1/2 onion, chopped
3 tbsp taco seasoning
8 low carb tortillas
1 can enchilada sauce
2 cups shredded cheese
INSTRUCTIONS:
Sauté the onion in the butter till translucent. Add chicken, 1 cup water and taco seasoning. Stir till the liquid is absorbed.
Take tortillas, add chicken and roll up. Do this for all 8 tortillas. Top with enchilada sauce, and cheese.
Cook at 350 for 20 minutes. Enjoy!
